You heard it right, there is a way to turn this delicious family recipe into a healthy (sorta) vegan masterpiece.
Ever since I’ve become a vegan, I quickly realized there’s a lot of great meat and milk alternatives which makes it really easy to “re-make” some classic meals. Some of my weekly favorites are veggie burgers, vegan tacos and my absolute favorite “pork” sliders, which are made from jackfruit!
But after eating these great meals, I realized my sweet tooth has not disappeared after becoming vegan, in fact I think it got worse. So after experimenting a lot and going through some unbearable patches of homemade desserts, I think I found the answer!
VEGAN AVOCADO BROWNIES

Yes! They’re gooey, creamy and you can eat a couple without feeling too guilty. Remember, it still has sugar so don’t go too crazy haha. Enjoy!
WHAT YOU’LL NEED:
- 1 mixing bowl and a whisk
- 1 cup well-mashed avocado, more ripe the better
- 1/4 cup coconut oil (or avocado oil)
- 1 cup coconut or gluten free all purpose flour
- 1/2 cup unsweetened cacao powder
- 3/4 cup cane sugar (or granulated sugar)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup almond milk (you can even use 1/2 cup cold brewed coffee + 1/4 cup water for a breakfast brownie idea)
- 1 1/2 cups of crushed pecans (use less/more depending on how crunchy you want your brownies). You can also use shredded coconut, almond butter or vegan chocolate chips instead!
- Pre Heat the Oven to 350 degrees F
- Grease an 8-inch square pan with cooking spray, although I like to use muffin trays so I don’t have to worry about cutting them when done.
- In mixing bowl, mash avocado with the oil and whisk.
- Add liquid ingredient (i.e. almond milk/coffee) and continue to whisk.
- Then add all the dry ingredients (flour, cacao powder, sugar, baking soda, salt).
- Mix all the ingredients until the batter is smooth and everything is evenly distributed. You may have to add a little extra almond milk depending on what ingredient you used.
- Lastly, add your “toppings” to the mixture (pecans, almond butter, etc) and continue to whisk in bowl until desired smoothness.
- Let’s cook these beauties! Finally, pour the entire mixture into the pan and evenly spread them.
Cook in oven for about 20 min to get a gooey texture to the brownies, if you want a more cake-like texture, leave them in for another 5-10 min. My opinion on the perfect brownie is if you stab it with a fork/toothpick and it comes out clean, then it’s good to go.
