In 2019 it’s pretty easy to cook vegan, so many recipes so little time. Being part Italian, it was hard at first to find foods that don’t upset my stomach and more importantly aren’t full of preservatives…

Today’s blog post is super easy, it’s a recipe to cook an Italian classic, Pasta and Sauce (vegan style)! This recipe only has 2 main ingredients but I added some veggies for some added texture. WHAT YOU’LL NEED:
- Red Lentil Fusilli (vegan)
- Marinara Sauce (from STI)
- Chopped Zucchini and/or Mushrooms
- Avocado Oil
- Vegan Butter (optional)
- Salt and Italian Seasonings
COOK TIME: Less than 20 mins (including prep)
First, grab 2 medium size pots. Fill one over half way with water and bring to a boil. The other, add some vegan butter and avocado oil (or olive oil). Now, toss in your veggies to cook for a few minutes.
Once the water has come to a boil in one pot, toss in Red Lentil Fusilli and cook for about 12min on medium heat or until the pasta is textured to your liking. Add a pinch of salt.
The other pot should have those veggies about halfway cooked by now. Add the marinara sauce to this pot so the veggies will soak up the sauce for the remainder of the cooking time. Simmer on low.
Once the pasta is fully cooked (keep sauce simmering and cover it on low heat, stir occasionally). Strain pasta and rinse it with cold water to stop the cooking process.
OPTIONAL: I like to put the pasta back in the pot and add butter, oil and Italian seasonings to give it flavor. My grandma used to say, “If pasta doesn’t taste good without the sauce, you’re doing something wrong!” Oh, I also like color to my pasta so I’ll toss in a little spinach and arugula then mix together.
Now you’re good to go! Through the pasta in a medium size bowl and add a scoop of sauce right on top. Grab your favorite glass of red wine and enjoy, a Healthy Vegan Pasta Dish…Salute!
